Cashew Bhurfi

It’s Deepavali!  The festival of lights.  The remembrance of good over evil.  Deepavali is also known as Laxmi Pujan, Chopda Pujan, Deva Divali, Sukhsuptika, Kaumudi Mahostavam, Badhausar, Balindra Pooja, Karthigai Deepam,  Sharda Pujan, Bandi Chhor Diwas and Diyari.

The day is marked in varying ways and usually beautiful sweet foods are in abundance.  Here’s a recipe hack for a refined sugar free, gluten free cashew nut bhurfi.

Ingredients:

400g cashew nuts
1/4  cup of coconut oil
1/2 a cup of coconut milk
50ml coconut cream
Hand full of coconut flakes
Sprinkle of cinnamon
Pinch of Himalayan rock salt

Directions:

  1. Blend the cashew nuts until it turns into a butter
  2. Add all other ingredients in and blend
  3. Place in a tray
  4. Freeze
  5. Enjoy

Prep time: 15 mins

Freeze time: 2 hours
