You’re having a munchies and you really need to put something into your stomach before you get hangry but it’s only 2 hours away from dinner. Wait, don’t reach out for that bag of potato chips in front of you (assuming you have one, work with me here). If you’re someone that’s trying to be healthy you have to know that those chips are nowhere near something you should have due to their high calorie and salt level without getting into the fact that they’re usually fried. Veggie chips are the solution for you.
Veggie chips are something you can try though. But there’s something you must know before you check your nearest store, as stated in a previous article, store-bought veggie chips tend to have high level of potato starch and coloring with little to no vegetable in them. So then what’s the solution? Well, make them yourself of course.
Spiced Sweet Potato Chips
Sweet potatoes are amazing and act as a good replacement for potatoes, mainly cause they’re lower in GI and it’s naturally sweet! Now let’s get down to the stats of this dish.
Prep Time: 10 Minutes | Total Time: 24 Minutes | Servings: 2
1 12-oz sweet potato, peeled
½ tsp ground cumin
¼ tsp sugar
¼ tsp chilli powder
¼ tsp salt
You should start things up by heating the oven up to 135 degrees Celcius. While the oven heats up, slice your sweet potatoes and put them on a baking sheet covered in cooking spray, you should also put some spray on the potatoes but not too much. After that, it’s just a question of waiting till the potatoes start browning before turning them over and repeating the process until all the sweet potato slices are cooked. Make sure to mix the cumin, sugar, chilli powder and salt into a mixture that you can toss the potatoes in once they’re ready.
If you have a dehydrating machine, then you can use that instead and this saves on oil so that it’s even healthier as it will retain more nutrients that may be cooked off in high temperatures. Another alternative is the trusty air fryer.
Zucchini/ Courgette Chips
Zucchinis (also known as courgettes) have a lot of different recipes to them and they can be quite tasty if cooked right, but they’re still an overall underrated vegetable. That being said, their consistency and taste make it a great substitute for potatoes or any potato-like vegetables.
Prep Time: 8 Minutes | Total Time: 40 Minutes | Servings: 2
2 large zucchinis
1 tbsp olive oil
¼ tsp salt
¼ tsp garlic powder (optional)
The oven must go up to 200 degree Celcius since you really want to cook them right. Slice the Zucchinis diagonally and make every piece about 1/8’’ thick. After you’ve sliced them, mix them up in a bowl alongside the salt, oil and garlic powder before arranging them on a pair of baking sheets so they can go into the warm oven.
While they’re in the oven you should make sure to turn them over consistently for about 25 minutes. After that turn down the heat to 150, this will help them cook without burning them, until they’re browned, it should take between 10 to 15 minutes. When time’s up, take them out and let them rest for several hours at room temperature.
Baked Beet Chips
This one is a bit more obscured, not many people really eat or even think about beets when they’re cooking, but if done right they can come off as really tasty and they’re really healthy to boot.

3 med uncooked beets
1½ tbsp coconut oil
¼ tsp salt
Oven at 175 degrees C this time. Make sure not to cut the beets too thick and mix them around with the coconut oil and add 14 teaspoons of salt. Put them on baking sheets when it’s done and into the oven. Wait 15 minutes until you flip them over and then repeat that process until they have dried and become crisp. One last thing to keep in mind though, make sure to lock them in air-tight containers and don’t wait too long till you eat them as they’ll stay good for only three days.
Sweet-Hot Pickled Carrot Chips
Carrot is not something you think of when you think of chips, or of anything really. In fact, I’m sure quite a few people had trouble with carrots as kids. However, just because they aren’t the first thing we think of it does not mean we can’t make something good with them.
Prep Time: 8 Minutes | Total Time: 16 Minutes | Servings: 10
½ cup white or cider vinegar
½ cup water
6 Tbsp honey
1 clove garlic, peeled and smashed
½ tsp turmeric
1 dried hot chilli pepper, 1–2 in. long
Start off by cutting the carrots diagonally into ¼-inch-thick slices. Then put the slices into a steamer for about 3 to 5 minutes. Once you take them out, make sure to properly rinse them off and then drain the water so that you can put them in either ovenproof glass or an earthenware container.
Mix the vinegar, honey, garlic, turmeric and chili pepper in a small non-aluminum saucepan and then boil and cook the mix for about 5 minutes. When the mix is done, you should then pour them over the carrots, making sure to use a sieve, and put them in the fridge for a few hours or even overnight if you want to.
Smoky Paprika Kale Chips
We’ve talked about kale a few times before, and with good reason. Kale isn’t usually looked up to very much, but it can act as a good vegan snack, especially when you don’t have much else. It also goes well with a lot of seasonings and spices.
Prep Time: 10 Minutes | Total Time: 30 Minutes | Servings: 6
1 large bunch kale
¼ c olive oil
1 Tbsp smoked paprika
½ tsp salt
Heat the oven up to 200 degrees C while you remove the kale’s stems and wash the leaves properly. Put them in a large bowl alongside the paprika and olive oil. Once you’re done mixing them up, proceed to put them on a baking sheet and roast them for about 30 minutes until they’re nice and crispy. Do make sure to toss them around every 10 minutes. Once it’s done, just mix in the salt and serve it up for a tasty and healthy snack.
And those are just a few recipes for making your own quick and handy veggie chips. These might be a little orthodox if you’re not used to it but it can really come in handy when it comes time to fight the salty, crispy temptation of potato chips.
